What do you know about Vietnamese cocoa pods?

If coffee has Arabica, Robusta, Catimor ... then the cocoa is also divided into many different lines: Forastero, Criollo, Trinitario. Each line of cocoa will have a different quality and taste.

Forastero cocoa fruit line: Flat, left-handed seeds that are usually yellow. It is the most popular and also has good pest resistance and high yield. However, they produce less flavored cocoa beans and are considered inferior.

Criollo Cocoa line: is a very special line with white, round, large [kernel] kernels, often yellow or red fruits. Seeds of this variety are rated as having the best flavor. However, they have poor resistance to pests, low yields and less than 5% in the world planting this variety.

Cocoa pods   Trinitario: This is a cross between Criollo and Forastero. It bears the characteristics of the above 2 lines. They have good pest and disease resistance, medium yield and deliciously flavored seeds. It is considered a high-quality seed, starting the production of high-quality chocolate.

The world market for cocoa beans is divided into two types: "flavor" and "regular" nuts. The "flavor" seeds are from the Criollo or Trinitario varieties, while the "regular" seeds are from the Forastero tree. "Flavored" cocoa bean production accounts for less than 10% of total annual cocoa production worldwide. [Nbsp] According to data from the World Cocoa Association, the worldwide production of cocoa is now more than 4 million tons a year,   Africa alone (mainly Ivory Coast and Ghana) provides more than 70% of that production, but cocoa beans from Africa are predominantly Forastero, which [ nbsp] has the least flavor in the cocoa family.

Cocoa grown in Vietnam is a hybrid   Trinitario  , which is a high-quality seed among the top 10% of "flavored" nuts worldwide. Although Vietnam currently only accounts for 0.1% of the world's cocoa production, Vietnam's cocoa beans are highly appreciated by the world for their unique taste, which is very different from the cocoa grown. in Africa. In October 2013, at the Salon du Chocolat contest held in Paris, France, Vietnamese cocoa beans were voted the best cocoa beans in Asia-Pacific. And the World Cocoa Organization (ICCO) has put Vietnam on the list of the world's leading countries producing good taste cocoa.

In Vietnam, cacao trees are grown mainly in provinces: Dong Nai, Binh Thuan, Ben Tre, Tien Giang, Binh Phuoc, Ba Ria Vung Tau, Lam Dong, Buon Me Thuot, Dak Lak ... In each different land due to Soil characteristics (soil, water source, climate ...) and processing of cocoa after harvesting of farmers are different, so the cocoa beans of each region have a unique unique flavor.
